For most of us, there is no way that we are going to give up pasta but with so many diets calling for you to cut out carbs pasta can be off the menu! This 101 Plan recipe is absolute genius and is perfect part of a blanaced diet.

The Italian Turkey & Penne pasta serves two people and will take about 25minutes to make. It is great for lunch or dinner. The high protein content will help to fill you up and keep you feeling fuller for longer.

Ingredients

250g Turkey Mince
150g baby leaf spinach
60g multi-grain penne pasta
200g passata
1 White onion, diced
2 Cloves Garlic
200ml water, boiling
¼ teaspoon sea salt
3 tablespoons parmesan cheese
1 teaspoon dried Italian seasoning, crushed
¼ teaspoon smoked paprika
¼ teaspoon black pepper
¼ teaspoon chilli flakes

Instructions

1. Begin by combining the Italian seasoning, paprika, black pepper and chilli flakes in a large bowl before adding the minced turkey.
2. Use a large spoon or your hands to mix the spices into the turkey.
3. Heat a large non-stick frying pan over a medium-high heat and add the onion, cooking for 5 minutes until it begins to soften and turn translucent.
4. Add the turkey mixture, using a large wooden spoon to break up the mince while it browns, it should take about 8 minutes for the mince to turn golden brown.
5. Once cooked, remove the mince mixture from the frying pan. In either the frying pan or a saucepan add the boiling water, bring back to the boil if needed and then add the pasta. Cook according to the packet (usually 8-10 mins for dried pasta).
6. When cooked drain the pasta (keeping about 50ml of the water). Return the pasta, turkey and cooking water to the pan with the passata, heat through and just before serving throw in the spinach, stirring until it has wilted.
7. Stir in the parmesan, or if you prefer, use it to sprinkle over the top.

Tip

To speed up the recipe you can cook the pasta at the same time that you are cooking the mince.
