A full English doesn't have to be off the menu in a 'healthy' lifestyle, this full English baked eggs recipe, with vegetarian bacon, mushrooms, tomatoes eggs and cheese is delicious and will support you to get or keep the body you want!

OK, so cheese isn't part of a traditional full English, but it takes these baked eggs to a whole different level! 

With every meal it is ideal to be eating both vegetables and lean protein; most of us don't get enough vegetables in our diet, and starting with a cooked breakfast can help you to boost your vegetable intake.

We don't store protein in our bodies in the same way that we do with carbohydrates and fats, which means we need to give our bodies a steady flow of protein. A bonus of eating protein is that it helps to make you feel full, which will be particularly helpful if you have difficulty in getting or keeping your body in the shape you want.

What is vegetarian bacon? It is made with soy protein and has less salt and saturated fat than traditional bacon. This doesn't mean that standard bacon is banned, but it is a food that fits into the 'eat less of' bucket, which is why we like to give you recipe ideas like this one, which use different types of foods. You can pick up vegetarian bacon in most supermarkets.

Serves: 2

Time: 25 minutes

Ingredients

60g vegetarian bacon

2 large mushrooms, cut into chunky slices

2 tomatoes diced

4 eggs

30g cheddar cheese, grated

A pinch of black pepper

Instructions

1. Begin by preheating your oven to 200°C

2. Fry the vegetarian bacon over a low-medium heat, turning occasionally, until crisp (around 8-10 minutes)

3. Add the mushrooms, tomatoes and bacon to two large ramekins or small bowls.

4. Crack the eggs into each dish, over the vegetables and bacon mixture, then sprinkle the grated cheese over the egg whites.

5. Sprinkle with black pepper and back for around 15 minutes, or until the cheese has melted and the eggs are cooked to your liking.

Tips

If you like a runny yolk take your ramekins out of the oven slightly earlier
