Two of the best-kept secrets to great home-made fries are, soaking before cooking to draw out moisture and pre-heating the over properly – restaurant standard fries need a hot oven.
This recipe makes 6 portions, and they take about 50 minutes in total to chop and bake.
400g potatoes (russet if you can get them)
1 litre water
1½ teaspoons of salt
1 tablespoon sugar
1 tablespoon olive oil
1. Begin by pre-heating the oven to 220°C (it is important that the oven is at 220°C before you put the fries in)
2. Peel the potatoes (or if you like the skins leave them on), slice them length ways, and then lengthways again to make chunky chips.
3. In a large bowl add the water, sugar and 1 teaspoon of the salt, stir until dissolved and then add the potatoes, leaving them to soak for 5 minutes in the water – this draws out the moisture so that they go crispier in the oven.
4. Once soaked, drain the potatoes and pat them dry with a clean tea towel or kitchen paper.
5. Dry out the large bowl, add in the remaining salt and oil then toss the potatoes in the oil mix until they are all coated (resist the temptation to add extra oil, that’s when you end up adding lots of extra calories that you don’t need).
6. Spread the fries on a baking tray (if it’s not a non-stick tray you will need to add a teaspoon of oil and spread over the tray to avoid sticking). Bake for 25mins at 220°C then flip the fries and turn up the heat to 260C and bake for a further 10mins. If you have made skinner fries, they will cook a bit faster so check more regularly. When ready the fries will look crisp and golden in colour.
