We are really lucky to live in a world where there is so much convenience food, but it can be confusing and frankly difficult to make ‘good choices’. This recipe is a bit of foodspiration picking a few convenience foods like pre-cooked salmon, microwave rice and frozen peas and combining them to make a delicious lunch or dinner in minutes.
Serves: 4
Time: 10 minutes
2 bunches asparagus (or green beans), trimmed and diagonally chopped
150g frozen peas
2 x 250g pack of ready to heat white rice
350g poached salmon fillets, flaked
100g baby spinach
Zest & juice of 1 lemon
2 teaspoons Dijon mustard
2 tbs olive oil
Pinch of sugar
Ground black pepper
1. Cook the asparagus (or green beans) and peas for 2-3 minutes in a large pan of boiling water until just tender and drain well. If you have a steamer, you can steam them instead of boiling – which will keep more of the nutrients in the veg.
2. Meanwhile, heat the rice according to the packet instructions, then put into a large bowl.
3. Add the asparagus, peas, salmon and spinach.
4. Put the lemon zest and juice, mustard, olive oil and sugar in a bowl and whisk to combine. Drizzle over the rice mixture and gently toss to combine.
5. Serve immediately, sprinkled with ground black pepper.
