When it’s cold outside, there is nothing more comforting than a big pot of stew and dumplings. But, if you are trying to be healthy, it’s off the menu, right? It doesn’t have to be! This lentil and quinoa stew is delicious and only 425 calories per serving, including the dumplings!!! if you haven't really tried lentils or quinoa before this recipe is the one to start with; it is an absolute crowd pleaser.

 

What's even better is that you don’t need any cooking skills to make it, just chop up the vegetables and throw it all in a pan and leave it to cook, and then before you know it you’ve got a warm hug in a bowl. If you haven’t made dumplings before they are super simple to make; if you can stir ingredients, you can make dumplings - mix the ingredients and add water make into roughly shaped balls and pop them on top of the stew, lid on and cook for 20 mins.
